Ingredients
The Salty Version
(1) cucumber
Juice of a ½ a lemon
Fresh thyme
(1) tsp – olive oil
Salt and Pepper
The Sweet Version
(1) cucumber
(1/4) cup – orange
juice
Sugar to taste
(1/4) tsp – orange
blossom water
1tsp Fresh Mint is optional for both
Directions
Recipe 1 – The Salty
Version
1. Peel cucumber or leave the peel on
2. slice into thin slices 1/2 inch thick
3. Add rest of
ingredients to cucumber (lemon juice, fresh thyme, olive oil, salt and
pepper)
4. Remove leaves from
thyme branch
5. Add salt and
pepper
6. Serve Cold
Note: you can adjust
all the ingredients to your taste.
Recipe 2 – The Sweet
Version
1. Peel cucumber or you can leave the peel on
2. slice into thin slices 1/2 inch thick
3. Mix rest of
ingredients with cucumber (orange juice, sugar, orange blossom water)
4. If you would like
to add more texture to the salad, you can add chopped iceberg lettuce to the
cucumber
5. Serve Cucumber
